Mauro has been our Executive Chef since 2019 and is responsible for multiple organizational and operational activities: he coordinates and supervises all kitchen staff, training new arrivals and ensuring an efficient work environment; he is responsible for creating new menus, selecting ingredients and defining recipes; he constantly monitors the quality of the dishes prepared and the ingredients used; he actively participates in the selection of suppliers and the choice of raw materials; he collaborates with the dining room staff to ensure impeccable service

Mauro is the son and grandson of artists, having been born into a family of pastry chefs. He has built a solid expertise by attending the most important cooking and pastry schools, both in Italy and abroad, such as - to name a few - Etoile Academy, Cast Alimenti by Iginio Massari and the French École Lenôtre. He then forged his experience as a chef in hotels, including 5-star hotels, and in restaurants around the world. He was Executive Chef at an important Italo-Libyan catering company with over 1000 employees, official supplier of embassies, oil platforms, and drilling rigs even in war zones. He has finally refined his interpersonal skills as a proud Cooking and Pastry Teacher for the beloved Sardinia Region.
