Mauro Loi
Executive Chef

Mauro has been our Executive Chef since 2019 and is responsible for multiple organizational and operational activities: he coordinates and supervises all kitchen staff, training new arrivals and ensuring an efficient work environment; he is responsible for creating new menus, selecting ingredients and defining recipes; he constantly monitors the quality of the dishes prepared and the ingredients used; he actively participates in the selection of suppliers and the choice of raw materials; he collaborates with the dining room staff to ensure impeccable service

Are you curious?
Mauro is the son and grandson of artists, having been born into a family of pastry chefs. He has built a solid expertise by attending the most important cooking and pastry schools, both in Italy and abroad, such as - to name a few - Etoile Academy, Cast Alimenti by Iginio Massari and the French École Lenôtre. He then forged his experience as a chef in hotels, including 5-star hotels, and in restaurants around the world. He was Executive Chef at an important Italo-Libyan catering company with over 1000 employees, official supplier of embassies, oil platforms, and drilling rigs even in war zones. He has finally refined his interpersonal skills as a proud Cooking and Pastry Teacher for the beloved Sardinia Region.

Marco Mazzatico
Master Pizza Maker

Marco has been with us since 2017. As a Master Pizza Maker, he takes care of the dough and leavening with particular attention to natural methods with sourdough, contributing to the selection of the best flours on the market; he prepares the recipes for the pizza menu, carefully choosing and dosing the individual ingredients; he follows his employees from recruitment to training and manages their working hours and shifts. Marco has been working in the restaurant business for over 25 years, starting as a cook and gaining experience in various restaurants on Lake Garda (the largest and most touristy lake in Italy) until he was appointed Chef. In 2003 he opened his own restaurant in Valpolicella which he managed for the next 10 years and - during that period - developed a passion for pizza, bread making and their natural processes that still drive him, today, to continue studying and research in these areas.

Diabaye Mbathio
Team Leader

Diabaye comes from Dakar, Senegal, and started with us as a waiter in 2016. Over time, he has demonstrated excellent technical and organizational skills, so much so that in 2018, he became a Room Manager. Currently, while still occasionally performing the roles of waiter or Head Waiter - if and when needed - he has been further promoted to Team Leader.

Stephanie Rocha Lopes da Costa
Administrative and HR Manager

Stephanie is a new addition to our team but already has a long and distinguished work experience. Let's start by saying that she has a degree in Business Management from the ULCV (University of Cape Verde), has specific training in Human Resources Administration and knows English quite well. As for her professional experience, she started with people-oriented tasks in important hotels on the island and then as a front office in a large telecommunications provider. Subsequently, she was able to refine, for several years, her skills both as an HR Assistant and as an administrator of the Security Department of two large tourist villages. She has also worked as a project technician linked to entrepreneurship at the Municipality of Sal. Stephanie considers herself a proactive, communicative person and ready to contribute and create value for the company. And we are very happy about that.

Image and Communication Manager

He has been collaborating with us since 2017 and takes care of everything related to PalmBeach's image: from drafting Marketing Plans to creating this website; from the graphics you see in the restaurant to any type of advertising. Oscar has been active in the field of Marketing and Business Communication for over twenty-five years, boasting a rich experience that has allowed him to study, analyze and acquire methods, systems and mechanisms to create healthy and effective communication. In 2019 he created the Win Win Advertising brand and moved his knowledge to the island of Sal, where he sees the possibility of offering advanced services for a future of Growth in terms of needs and quality also in terms of image and communication.
